Lentil and vegetable soup

Tayos Recipe 

Ingredients:

- Potatoes
- Carrots
- Leeks
- Yellow peppers
- Lentils
- Onions
- Garlic
- Salt
- Black pepper
- Beef stock cube
- Carrot leaves
- Oil
- Flour

 Instructions:

1. **Prep the Vegetables:**
- Wash all the vegetables thoroughly.
- Peel and chop the potatoes, carrots, leeks, yellow peppers, onions, and garlic.

2. **Sauté Onions and Garlic:**
- Heat oil in a pot over medium heat.
- Add the chopped onions and garlic to the pot and sauté until they are soft and fragrant.

3. **Prepare :**
- Add a bit of flour to the sautéed onions and garlic, stirring continuously. This will help to thicken the soup later on.

4. **Combine Ingredients:**
- Add the chopped vegetables (potatoes, carrots, leeks, yellow peppers) to the pot.
- Stir the vegetables .

5. **Add Liquids and Seasoning:**
- Cover the vegetables with water.
- Add the beef stock cube to the pot.
- Season with salt and black pepper to taste.

6. **Cook the Lentils:**
- Add the lentils to the pot.

7. **Simmer:**
- Bring the mixture to a boil, then reduce the heat to a simmer.
- Let the soup simmer until the lentils and all the vegetables are tender, stirring occasionally.

8. **Final Touch:**
- Chop the carrot leaves and add to the soup for added flavor and garnish once the soup is nearly done.

9. **Serve:**
- Once the vegetables and lentils are fully cooked, taste and adjust the seasoning if necessary.
- Serve hot and enjoy your homemade vegetable and lentil soup!

 Notes:
- You can adjust the thickness of the soup by adding more water or stock if it becomes too thick.
- Feel free to use vegetable stock instead of beef stock if you prefer a vegetarian version.
